his tasty curry needs to be simmered and then left to stand to allow the flavors to blend beautifully. Use an electric wok if you have one to maintain the steady temperature needed for gentle simmering. Tiny pea eggplants are sold in Asian stores. If you can't find them, use regular eggplants cut into chunks.





Ingredients: (Serves 4)
4 duck breast portions
400 ml/14 fl oz can coconut milk
200 ml/7 fl oz/scant 1 cup chicken stock
30 ml/2 tablespoons red Thai curry paste
8 scallions (spring onions), finely sliced
10 ml/2 teaspoons grated fresh root ginger
30 ml/2 tablespoons Chinese rice wine
15 ml/1 tablespoon fish sauce
15 ml/1 tablespoon soy sauce
2 lemon grass stalks, halved lengthways
3-4 kaffir lime leaves
300 g/11 oz pea eggplants (aubergines)
10 ml/2 teaspoons sugar
Salt and ground black pepper
10-12 fresh basil and mint leaves, to garnish
Steamed jasmine rice, to serve
