    We’re finally getting spring weather in Tennessee. It’ll be 70 degrees today, 21 Celsius. I got to play with my five nieces and nephews yesterday and today I’m cooking two Indian dishes. I have a lot more energy when it’s warm.

    I am making chicken tikka on the grill and I have premade a dipping sauce that goes with it, the dipping sauce takes 4 hours and a bunch of spices to make. I am also making chicken vindaloo. I'll cook enough for two meals of each type and freeze the extra one for next week. The spices for the dipping sauce cost me about 60 dollars but they are enough for 2 years. I make big batches and freeze it. I also give my sister some because her husband loves it and she doesn't have time to make it. My whole family loves Chicken Tikka with the dipping sauce. We lived in Dubai and bought it from a takeout place every week.

    No. I could buy some but I prefer single malt scotch or a good bourbon. I like a lot of wines. I used to fly first class or business class all the time and tried a bunch of wines with the meals. I also worked overseas for 20 years so I drank wines from a lot of different countries. I don't like most American beers. I was raised drinking European beers and American beers taste too watery. Australia has great beers. I tasted 25 different micro breweries in a four day trip to Sydney once.

    My parents-in law went on holiday to southern Ireland many years ago when the "troubles" were still "troublesome", but apparently had a great time, and came back with a bottle of some colourless liquid that purported to be "Poteen" - illegally distilled, of course - and it had no discernible flavour, but a kick like a mule! Like you, I prefer a better quality more palatable spirit.
    I've recently discovered, courtesy of a friend, a Belgian beer called Leffe Blonde that I can recommend - it's 6.6% abv, so it's not some insipid crap either, and I like it - you might like to try it?

    I'll try Leffe Blonde. I used to buy Amstel beer all the time but only Amstel Light is sold now. For a few years I bought a lot of bottles of Abelour 10 years old single malt scotch. It sold for about $23 per bottle and I wish I would have bought cases of the stuff after they quit selling it.

    One's palate tends to change as one ages, and my own has done so markedly. I started off trying Scotch Single Malts, discovering rapidly that I preferred the lighter flavoured Speyside whiskies to the Islay Malts that I found to be too pungent and smokily acrid. For a short while I kept a sort of "train-spotters" list of whiskies that I'd tried, and I see that Aberlour (Speyside) is on that list, but my favourite was The Macallan, the first whisky that I discovered that was finished in old sherry casks. Most Scotch distilleries nowadays adopt similar practices, some offering a whole range of whiskies finished in old Madeira casks, port, sherry, rum and even Bourbon casks, all imparting their unique character. Then I experimented with Irish Whiskeys, although none became favourites, and for the last decade or more I've become a Bourbon drinker, two recent favourites being Wild Turkey 101 and Woodford Reserve, although I can also recommend Penderyn, a Welsh single malt with a Madeira finish (46%abv) that I discovered via a birthday present a few years ago.
    There's a great deal of pleasure to be had in this hobby.

    #S-type FYI I toured the Woodford Reserve brewery in June of 2008 in the area surrounding Lexington, KY, USA. I am not a bourbon drinker.

    It's ironic isn't it, I'm a whisky drinker but I've never been into a distillery, even though I must have been close to one or two over the years! I bet you found it interesting, even though you don't drink it!
    Spirits distilling is becoming something of a growth industry in England, with Gin distilleries popping up here and there - one in my own home town here, and a new whisky distillery only the other day reported to be opening further south!

    I'm going out now to try the Woodford Reserve and a Glenmorange set of four bottles so I can try them all. I'll try the Penderyn next time. We have bourbon distilleries in Tennessee and I'll visit one this summer. I know there is one on the way to Nashville when I visit my sister.
