Sorry, got talking to grims on the phone.

 

Cook pork chops through (the recipe calls for bone in - but you could use either). Lightly season and cook in a pan with some oil until they're cooked through (4-5 mins per side).

Mix 1/2 cup apricot jam, 2 tablespoons coarse grained Dijon mustard, 1 tablespoon soy sauce, 2 tablespoons lime juice, 1-2 minced garlic cloves, and pinch of Cayenne pepper (if you like a spice add some more cayenne).

Once it's all mixed together, cook in a skillet until it boils; then reduce heat and simmer. It will reduce and thicken. Once it's done spoon it over the pork chops.

I don't work for the government per se.... our company is independent and gets paid by the government for each patient we work with. (I.e. tough them up for the working world so that they can become obedient tax payers again.)
